Tivoli Brewing Company in Denver, Colorado

One of the oldest breweries in Colorado just reopened its doors this August at its former location on the Auraria campus. Tivoli Brewing Co., located in heart of the Student Union center at Metropolitan State University, had been closed for almost 50 years before restarting production. Not only is the Tivoli Brewing Co. one of the oldest breweries in Colorado, but it also has a big chunk of history attached to its name. The brewery first opened its doors in 1859, but after a series of unfortunate events, including a union strike and a flood, the brewery shut down. It wasn’t until this past year that the facility began to been working hard to reopen the historic brewery, keeping some of the original pieces and upgrading others.

When you walk into the Tivoli Brewing facility, you will notice the nostalgic feel of the space. The wood floors are still in tact, and in the upper taproom you can see where the old office was located. The ammonia condenser and generators in the cellar space no longer function, but still provide another historical piece to the facility. The owners upgraded to a 30-barrel system, which began production in September at the start of the Great American Beer Festival.

The head brewer, Dieter Foerstner, said their purpose was to “tug on people’s nostalgic heart strings while slipping in some fun, interesting styles to build the brand that early Colorado brewers established.” The brewers sought assistance from Michael Occhiato, the last brewer from the old Tivoli. Michael helped with the recipe for the Tivoli Helles Lager, and they also researched the method for brewing Sigi’s Wildhorse. Between the alchemy and the science, mixed with the art of craft brewing, the Tivoli Brewing Company has resurrected itself and is developing a platform that will aid in teaching students of the university about brewery and brewpub operations.
