Opened in 1995, the Goose Island Fulton Street Brewery occupies over 37,000
square feet. Inside, stainless steel kettles and fermenting tanks dwarf the
team of brewers who oversee the production of twelve different varieties of
Goose Island beer and two craft sodas. Brewmaster Greg Hall (Founder John
Hall’s son) leads the brewing team, all of whom attended the prestigious
United States Brewers Academy at the Siebel Institute of Technology in
Chicago. The team precisely combines the traditional ingredients of malted
barley, hops, yeast and water to create its award winning ales. Adjacent to
the brewhouse, the state of the art, high speed bottling line fills ten
cases (240 bottles) per minute with such celebrated beers as Hex Nut Brown
Ale, and Wolaver’s Pale Ale. Because no preservatives are used in the
process and the beer is not pasteurized, Goose Island puts a freshness date
on all of its products.

The Brockway Chophouse is an upscale Prime Steakhouse in the northwest

Piece unites classic New Haven-style thin crust pizza with award-winning
microbrews in a spacious loft setting. We opened in July 2001 after
transforming a roofing company garage into a casual pizzeria complete
with a skylite ceiling and sunken lounge area. Sports fans can catch
events on a series of eleven 42” plasma TVs that span the length of the
bar. Revelers pack the house for games and special events.
Brewer Jonathan Cutler has won twelve major awards in five years of
operation. In 2006 Piece and Jonathan won the prestigious World Beer Cup
