Schell's Stag #9 Cave-Aged Barrel-Aged Lager Brewed in New Ulm, MN

August Schell Reopens 19th Century Lagering Cave in New Ulm, MN   

In a nod to its 19th century brewing traditions, the 155 year-old August Schell Brewing Company has released a limited-edition beer aged in American whiskey barrels stored in the breweryís original, underground lagering caves. Located below the historic brewery, the naturally cooled caverns were originally constructed in the 1860ís to facilitate brewing in an era that predated electrical refrigeration.

Stag #9, Cave-Aged Barrel-Aged Lager is the latest limited release in August Schell Brewingís Stag Series. This dark lager is aged in American whiskey barrels and stored in Schellís original, naturally rolled, 19th century lagering caves located deep below the brewery. Stag #9 has a dark brown to black color with roasted malt notes of dark chocolate, toffee, light oak, char and hint of vanilla. This lager is medium to full bodied with low hop bitterness and a slight dark caramel sweetness.
ďIt was a lot of fun cleaning up the old lagering caves and getting a chance to use them to store beer in wooden barrels like they did over 100 years ago,Ē notes Jace Marti, Schellís brew master and sixth generation member of the Schellís family.

The brewery intends to continue using the historic lagering caves as a laboratory for exploring the use of traditional brewing techniques in the creation of unique new beers.
