Firestone Walker “Opal” Dry-Hopped Saison brewed in Paso Robles, California
Walker's interpretation of the rustic Wallonian Saison style is a harmonious
blend of rustic grains, spicy yeast and unique sauvignon blanc tones.
Inviting lemon grass and gooseberry meet peppery spice and fresh grain
aromas. Spicy Belgian yeast create a complex yet dry and refreshing canvas
with splashes of citrus and stone fruit with a bright tropical white wine
finish. Hop bitterness is assertive yet harmonious rounding out slightly
tart and refreshing. ABV: 7.5% IBU: 35
Opal’s Ingredients (or Most of Them)
Opal is brewed in stainless steel with Belgian saison yeast and Weyermann
Pilsner malt as well as malted and unmalted wheat. Styrian Golding and Amarillo
provide the hop base, with dry hopping courtesy of Hallertau Blanc. “We’re
usually very transparent when it comes to the ingredients of our beers,”
Brynildson said. “But Belgian brewers tend to be a bit cagey with the details,
and that’s what gives a lot of farmhouse ales their mystique. So if there’s a
secret spice in Opal, I’m not telling.”

History of Firestone Walker Brewing Company
It began innocently enough: a couple of brothers-in-law sitting around debating
the subject of good and bad beer. Instead, their search for a decent ale to led
them to brew their own. Given Mr. Firestone’s winemaking bias and Mr. Walker’s
complete lack of fermentation experience, they believed 60-gallon oak barrels
were the appropriate vehicle in which to create their perfect elixir.
OK, so initial attempts were forgettable. But like so many great ideas, out of
that disaster was born a handy invention – the Firestone Union. Based on classic
brewing traditions from Burton-Upon Trent, this bizarre and unlikely system of
linked barrels has the ability to produce rich and complex ales. In 1996 the
accidental duo shelved their endless discussion on better beers and settled for
building a world-class brewery that bore their names on California’s Central
Coast……the debate was now over..
